CLOVES

The flower buds of Syzygium aromaticum are cut and dried just in time so as to keep their fragrance.

The plantations are in Madagascar, India, Indonesia, Tanzania but the little brown buds, once dried, they travel all over the world to flavor stews, marinades, sweets, teas. Cloves pair well with cinnamon, allspice, vanilla, basil, onion, star anise, and peppercorns.
